Shrimp With Whole Wheat Couscous |

Adapted from Everyday Food Martha Stewart. Delicious as a summer meal on the patio! Ingredients:
1 pound trimmed green beans, snapped in two |
2 cups trimmed snow peas |
1 pound deveined, detailed and peeled shrimp |
1 cup whole wheat couscous |
1/4 cup fresh basil leaves, chiffonade |
2 tbsp fresh oregano |
2 tbsp vegetable broth |
juice of one lemon (about 3-4 tbsp) |
Directions:
1. In a large pot, boil green beans about 4 minutes. 2. Add snow peas and shrimp, stirring. 3. Cover and cook for 1 minute (or until shrimp is opaque). 4. Add couscous and stir. 5. Cover and remove from heat. Let stand for 5 minutes. 6. Add basil, oregano, broth, lemon juice and zest. 7. Salt and pepper to taste. Fluff with a fork and serve. |
