Shrimp With Sweet Mango Fiery Sauce |

This came from a small place in the Virgin Islands. I use to live on Water Island just south of St Thomas and this was my favorite for quite some time. Ingredients:
2 mangoes, diced |
1 (7 ounce) can chipotle chiles |
1/2 cup diced pineapple |
1/4 cup onion |
1 1/2 teaspoons minced fresh cilantro |
1 small bell pepper |
24 shrimp, shelled and deveined |
1 garlic clove |
1 tablespoon fresh basil |
1/2 lime |
1 tablespoon olive oil |
Directions:
1. In a medium glass bowl mix the mangoes, pineapple, onion, cilantro and chopped bell pepper with the adobe sauce from the 7 oz can of chipotle. When mixed place in blender until pureed. Let it set in the frig covered for at least 2 hours. 2. Heat 1-2 tablespoons of oil in a skillet. Put in the garlic and shrimp, do not burn the garlic. Sauté for 1-2 minutes. Turn the shrimp over and add the basil and juice from the lime. Pour the sauce over the shrimp and cook just to heat the sauce. Serve. |
