Shrimp With Spicy Tomatoes |

I found this in a recipe book, I have since changed it slightly. Ingredients:
2 tablespoons oil |
1/2 cup onion, diced |
2 garlic cloves, minced |
1 teaspoon cumin powder |
1 tablespoon sugar |
1/4 teaspoon ground ginger |
1/8 teaspoon cayenne pepper |
1/2 cup mushroom, sliced |
1 (14 ounce) can diced tomatoes with green chilies |
1 tablespoon tomato paste |
1 tablespoon fresh parsley |
1 tablespoon fresh basil |
1/4 cup white wine |
1 lb shrimp, peeled and deveined |
1 lb bow tie pasta, cooked |
salt and pepper |
Directions:
1. .saute onions, garlic, and mushrooms in oil.add wine. 2. add everything but shrimp and pasta, allow to simmer about 1/2 hour. add shrimp cook til shrimp are pink. 3. serve over pasta. 4. *my husband likes mexi blend cheese topped on pasta.I like parmesan cheese. 5. ** I always double the recipe, take the left over sauce( no shrimp) and freeze for next week. I take it out of the freezer the day before to thaw. when ready for dinner bring to a hot simmer add another 1 lb of shrimp, cook til done and put over pasta. taste even better the second time around. |
