Shrimp With Orange Pineapple Sauce |

This is yet another recipe from TOH Healthy Cooking magazine. The contributer is Radelle Knappenberger. This looks like a really quick and easy appetizer. I am storing it here to make for New Year's Eve. Ingredients:
1/4 cup pineapple preserves |
1/4 cup orange marmalade |
1/4 cup lemon juice |
1 tablespoon water |
1 teaspoon cornstarch |
1 lb cooked shrimp, medium sized, peeled and deveined |
Directions:
1. In a small saucepan, combine pineapple preserves, orange marmalade, lemon juice, water and cornstarch. 2. Bring to a boil. 3. Cook and stir for 2 minutes or til thickened. 4. Chill until serving. 5. Serve with the shrimp. |
