Ingredients:
2 pounds medium shrimp, cooked and cleaned |
1 large cucumber, peeled, seeded and diced |
5 scallions, trimmed and sliced thinly |
2 mangoes, peeled, pitted and chopped |
1 jalapeno, stemmed and minced |
1/3 cup minced cilantro leaves |
salt, to taste |
Directions:
1. Combine all the ingredients together in a bowl. Season to taste with salt and toss together. |
