Wonderful shrimp appetizer ina garlicky parsley sauce. Great to have on the deck with crusty bread and a glass of wine. Ingredients:
6 tbs extrsa virgin olive oil |
5 cloves garlic,finely chopped |
2 tbs brandy |
1/2 c dry white wine |
1 c chopped fresh parsley |
kosher salt and fresh ground pepper |
18 large shrimp,peeled and deveined,tails intact |
warm baguette slices,for serving |
Directions:
1. Heat 2 Tbs oil in skillet over med. heat. Add the garlic and cook till it softens slightly,about 1 min. Add the brandy and swirl pan till alcahol evaporates. Add the wine and 1/4 c water and cook to reduce slightly,3 to 4 mins. 2. Stir in the parsley,1/2 tsp salt and pepper to taste. Tranfer the mixture to a blender with 2 Tbs oil and puree till smooth.Cover and set aside. 3. When ready to serve,heat remaining 2 Tbs oil in skillet over high heat. Add the shrimp;cook till just pink,1 to 2 mins. 4. Add the green sauce,season with salt and pepper and warm through. Drizzle with olive oil or water to lossen sauce. Serve with bread. |
