Shrimp With Feta and Spaghetti Squash

Ingredients:
1 lb shrimp
2 cups diced tomatoes
1 tablespoon olive oil
2 garlic cloves
4 ounces feta cheese
1 spaghetti squash
Directions:
1. Cook spaghetti squash with your preferred method. (Microwaving a squash that has been stabbed with a fork works well).
2. Heat oil in pan. Sautee garlic and scallions. Add peeled and deveined shrimp. Cook until just done, add feta cheese.
3. Serve over prepared spaghetti squash.
