Low carb, tasty and easy to make Ingredients:
1 lb shrimp |
2 cups diced tomatoes |
1 tablespoon olive oil |
2 garlic cloves |
4 ounces feta cheese |
1 spaghetti squash |
Directions:
1. Cook spaghetti squash with your preferred method. (Microwaving a squash that has been stabbed with a fork works well). 2. Heat oil in pan. Sautee garlic and scallions. Add peeled and deveined shrimp. Cook until just done, add feta cheese. 3. Serve over prepared spaghetti squash. |
