Shrimp With Cocktail Sauce Ina Garten |

This is a recipe I used for my Valentine's menu. Adapted from Ina Gartens Ingredients:
1 lemon |
2 lbs large shrimp (30/lb) |
1/2 c ketchup |
1/2 c chili sauce |
3 t grated horseradish |
2 t fresh squeezed lemon juice |
1/2 t worcestershire sauce |
1/4 t louisiana hot sauce |
Directions:
1. For Sauce: Stir everything together in a medium bowl and refrigerate to meld flavors. 2. For Shrimp: Squeeze 1/2 of the lemon into a pot of boiling water, add the rind too. Add shrimp and cook until pink. Do not overcook, about 2-3 minutes. Immediately place into an ice bath to stop cooking. When chilled peel and devein. Keep chilled until serving time. |
