Shrimp with Cilantro and Lime |

Serve this spicy shrimp mixture over a bed of shredded lettuce or mixed greens. Ingredients:
1 3/4 pounds large shrimp, peeled and deveined |
2 tablespoons fresh lime juice |
1/2 teaspoon ground cumin |
1/4 teaspoon ground ginger |
2 garlic cloves, minced |
1 tablespoon olive oil |
1/4 cup chopped fresh cilantro |
1 teaspoon grated lime rind |
1/2 teaspoon salt |
1/4 teaspoon pepper |
Directions:
1. Combine first 5 ingredients in a large bowl; toss well. Heat oil in a large nonstick skillet over medium-high heat. Add shrimp mixture, and sauté 4 minutes or until shrimp are done. Remove from heat; stir in cilantro and remaining ingredients. 2. carbo rating: 3 |
