Shrimp with Basil and Fresh Tomatoes |

Plump, juicy shrimp and sun-ripened tomatoes get the zesty taste of the Mediterranean from fragrant garlic and fresh basil in this delicious pasta dish. Tomatoes and basil are a classic Italian combination and mingle perfectly with fresh or frozen shrimp. This easy pasta meal comes together in 25 minutes. Adapted from Better Homes & Gardens. Ingredients:
12 ounces shrimp, peeled |
1 tablespoon extra virgin olive oil |
1 cup onion, chopped |
2 cloves garlic, minced |
2 cups tomatoes, chopped |
2 tablespoons fresh basil, sliced in ribbons |
1 tablespoon capers, drained and rinsed (optional) |
1/4 teaspoon salt |
1/8 teaspoon pepper |
8 ounces spaghetti (or other pasta), cooked and drained |
1/4 cup finely shredded parmesan cheese |
1/4 cup fresh basil leaves (optional) |
Directions:
1. Thaw shrimp, if frozen. Set aside. 2. Pour olive oil into a large skillet. (Add more oil as necessary during cooking.) Preheat over medium-high heat. Saute onion and garlic in hot oil for 2 minutes or until onions are crisp-tender. Remove onion mixture from the pan. 3. Add shrimp to the hot pan. Stir-fry for 1 to 2 minutes or until shrimp turn opaque. Remove from pan. 4. Return onion mixture to the pan over medium-low heat. Add tomatoes, basil, capers (if desired), salt, and pepper. Stir all ingredients together. Add the cooked shrimp. Cook and stir for 1 minute more or until heated through. Serve immediately over hot cooked spaghetti or other pasta. Sprinkle with Parmesan cheese. Garnish with fresh basil leaves, if desired. |
