Zesty shrimp dish that is good over tortilla chips or rice. Ingredients:
1 tablespoon vegetable oil |
1 small green pepper |
1 garlic clove |
1/2 cup corn |
1/2 cup salsa |
1 pint cherry tomatoes |
1 lb shrimp, cooked |
1 tablespoon butter |
1 tablespoon cilantro |
1 tablespoon lime juice |
Directions:
1. In a skillet, heat oil and add green peppers. 2. Cook 3 minutes. 3. Add garlic. 4. Stir in corn and salsa. 5. Bring to a boil. 6. Stir in tomatoes and shrimp. 7. Cook 1 minute. 8. Stir in butter. 9. Spoon over tortilla chips or rice. 10. Garnish with cilantro and lime. |
