This simple Shrimp, tomatoe and rice salad is a nice way to do lunch on a hot day or can be used as a side dish. It is refreshing and light can be made a head of time served warm or chilled. What ever your choice Try it both ways. Ingredients:
2 cups white rice |
2lbs baby shrimp |
2 lrg tomatoes diced |
1 sm onion chopped |
2 1/2 cups mayo |
1tsp celery salt |
1tsp pepper |
Directions:
1. Boil rice in pan until fluffy. Make rice according to directions on package. 2. Wash shrimp and add to rice along with tomatoe, onion, spices and mayo 3. stir thoroughly . 4. Serve warm or chill and then server. 5. Tastes great both ways. |
