Found this recipes years ago (don't know where it originated) and everytime I make it, people can't get enough of it. They will crowd around in the kitchen waiting for the next batch to come out, so BEWARE! Ingredients:
8 ounces cooked peeled shrimp |
1 small leek |
1/4 teaspoon salt |
1 teaspoon light soy sauce |
1 tablespoon cornstarch |
1 egg white, beaten |
3 slices white bread, crusts removed |
4 tablespoons sesame seeds, optional |
oil, for deep-frying |
Directions:
1. Dice shrimp and leek (or you can use scallions) very finely. 2. (Could use a food processor) Mix in salt, soy sauce, cornstarch and egg white. 3. Spread mixture onto one side of each slice of bread. 4. (Can add seasme seeds at this point if you like) Press down well. 5. Cut each slice of bread into four equal triangles. 6. Heat oil in pan at least 1/2 inch in depth. 7. until almost smoking. 8. Carefully place triangles in the oil coated side down and cook for 2-3 minutes until golden brown. 9. Flip over and cook for 1 minute. 10. Remove with a slotted spoon and drain on paper towels. 11. ENJOY! |
