From Betty Crocker Chinese, these sound like a fun appetizer. There are also directions on makng these ahead. Ingredients:
1/2 lb shrimp (fresh or frozen) |
1/2 cup chopped green onion (with tops) |
1/4 cup all-purpose flour |
1/4 cup water |
1 egg |
1 tablespoon cornstarch |
1 teaspoon salt |
1/4 teaspoon sugar |
1/4 teaspoon sesame oil |
1 dash white pepper |
vegetable oil |
5 slices white bread |
Directions:
1. Peel shrimp. (If shrimp is frozen, do not thaw; peel under running cold water.) 2. Make a shallow cut lengthwise down back of each shrimp; wash out sand vein. 3. Cut shrimp lengthwise into halves; cut crosswise into halves. 4. Mix shrimp, green onions, flour, water, egg, cornstarch, salt, sugar, sesame oil and white pepper. 5. Heat vegetable oil (1 1/2 inches) in wok to 350ºF. 6. Remove crusts from bread; cut each slice into 4 squares. 7. Place 1 or 2 pieces shrimp with sauce on each bread square. 8. Fry 5 squares at a time until golden brown, turning frequently, about 2 minutes. 9. Drain on paper towel. 10. Do-ahead Directions: 11. Prepare Shrimp Toast; cover and refrigerate no longer than 24 hours. 12. Just before serving, heat uncovered in 400ºF oven until hot, 12 to 15 minutes. Drain on paper towel. |
