From my collection of handwritten recipes. Ingredients:
1 lb shrimp, shelled and minced |
1 teaspoon minced ginger |
1 teaspoon dry sherry |
1 teaspoon salt |
1 egg white |
5 minced water chestnuts |
1 teaspoon cornstarch |
1/4 teaspoon msg |
8 slices day old sandwich bread, crusts removed |
2 tablespoons minced ham |
2 tablespoons parsley, minced |
Directions:
1. Mix shrimp, ginger, sherry, salt, egg, water chestnuts, cornstarch and msg. Cut each piece of bread into four squares. Place a mound of shrimp mixture on each bread square. Garnish each square with minced ham and parsley. Press onto bread in a little mound. Heat oil and deep fry squares until both sides are golden brown. Serve hot. (No, the mixture does not drop off the toast!). |
