12 hard cooked eggs, peeled and sliced in half |
1 1/2 cups slasa |
6 oz raw shrimp, peeled and cut into small dice, about 1/2 pound |
1/2 tsp ground cumin |
2 tbs fresh chopped cilantro |
2 small green onions thnly sliced |
1 jalapeno pepper, thinly sliced ( optional garnish - )in circles |
Directions:
1. cut a small slice off ends of eggs so they will stand upright 2. Crumble yolks in a small vbowl with the sliced off ends of eggs, chopped 3. Bring salsa to a boil over med-hi heat and then simmer in saucpean and cook until liquid has evaporated about 5 minutes 4. Stir in shrimp, cook to opague- 1 to 2 minutes 5. Stir in cumin, cilantro, onions, and reserved yolks and whites 6. Cover filling and egg halves and chill till serving 7. When ready to serve, spoon filling inmto eggs and top each half with a jalepeno pepper slice |
