8 ounces baby shrimp |
1 tablespoon lemon juice |
1/2 cup finely chopped celery |
2 tablespoons finely chopped green onions |
2 tablespoons finely chopped fresh chives |
1/4 cup mayonnaise |
salt and pepper |
2 avocados |
Directions:
1. In a bowl, combine shrimp and lemon juice. Toss well. Add celery, green onion, dill, mayo, salt and pepper. 2. Cut each avocado in half and remove pits. 3. Place one avocado half on each plate. Fill with shrimp mixture on top (it will spill over the sides). |
