Shrimp Snow Pea And Pasta Soup |

Shrimp, Snow Peas and Angel Hair pasta in a clear chicken broth infused with ginger and lemon grass. Ingredients:
12 large shrimp |
3 1/2 oz. snow peas (mangetout) |
1 tbl. oil |
2 small onions chopped |
6 cups chicken stock |
1/2 tsp. grated ginger |
6 1/2 oz. angel hair pasta |
1 tbl. lemon grass, tender (white) part chopped fine |
thai basil for garnish (regular basil can be used) |
Directions:
1. Peel and devein the shrimp, leaving the tail in tact. 2. Trim the snow peas and cut in pieces if they are large. 3. Heat oil in a pan. 4. Add the onion and cook over low heat until softAdd the chicken stock to the pan . 5. Add the lemon grass to the pan and bring to a boil. 6. Add the ginger, snow peas, shrimp, and pasta. 7. Cook over medium heat until pasta is al dente (about 4 minutes). 8. Season with salt and pepper, garnish with basil and serve. |
