Shrimp Scampi and Tomato Broil |

This is a fast recipe that always gets great reviews. I usually double the recipe because everyone in my family goes for seconds. Sometimes I even pour if over pasta...yum! Ingredients:
2 tablespoons olive oil |
4 cloves garlic, minced |
1 pound large shrimp, peeled and deveined |
2 tomatoes, chopped |
1/2 cup white wine |
1 cup shredded mozzarella cheese |
2 tablespoons grated parmesan cheese |
1 teaspoon dried parsley |
Directions:
1. Preheat the oven's broiler, and set the oven rack about 6 inches from the heat source. 2. Heat the oil in a large, oven-proof skillet over medium heat; add the garlic, and cook until lightly browned, about 1 minute. Stir in the shrimp and the tomatoes. Cook just until the shrimp turn pink, 3 to 5 minutes. Pour in wine; simmer for 2 additional minutes. 3. Top shrimp with mozzarella cheese, and broil until the cheese is melted and golden. Sprinkle with Parmesan cheese and dried parsley before serving. |
