Low fat, low calorie shrimp scampi. Ingredients:
2 tsp olive oil |
1 lb shrimp, peeled and de-veined |
3 garlic cloves, minced |
1/4 teaspoon crushed red pepper |
1/4 cup other dry white wine |
1/2 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
1/4 cup chopped italian parsley |
1 tablespoon fresh lemon juice |
1 tsp lemon zest |
6 oz. pasta |
Directions:
1. Heat oil in a large skillet over medium-high heat. Add shrimp; sauté 1 minute. 2. Add garlic; sauté 1 minute. 3. Stir in wine, salt, and pepper; bring mixture to a boil. 4. Reduce heat to medium; cook 30 seconds. 5. Add parsley and juice; toss well to coat. 6. Cook 1 minute or until shrimp are done. 7. Toss with 6 oz linguine or angel hair pasta, if desired. |
