low calorie shrimp scampi Ingredients:
1 pound cooked shrimp |
4 cloves garlic |
3 tbsp butter |
4 oz white wine |
1 tbsp lemon juice |
3 tbsp grated parmesan cheese |
8 oz mushrooms |
2 tbsp cornstarch |
1/8 tsp pepper |
1/4 cup water |
Directions:
1. could not get the analyzer to recognize unsalted butter but if used, the sodium count would be 317mg rather than 377mg as shown with regular butter 2. saute garlic in butter until fragrant, add mushrooms, shrimp, lemon juice and wine 3. cook until shrimp are pink 4. mix cornstarch with water and add to pan, toss to cover shrimp 5. serve over pasta or rice, sprinkle with cracked pepper and Parmesan cheese |
