I personally don't eat fish or shell fish of any kind, but my hubby loved this version of Shrimp Scampi. He told me it was even better than Red Lobster's! Prep time will depend on the shrimp used. I used cooked shrimp, defrosted in refrigerated & dipped in hot water. Ingredients:
4 teaspoons olive oil |
4 medium garlic cloves, crushed |
1 cup vermouth, dry red |
2 cups diced tomatoes |
1 1/2 lbs large shrimp, shelled & deveined |
1 cup fresh parsley, chopped |
hot pepper sauce, several drops |
salt & freshly ground black pepper, to taste |
4 cups cooked rice (optional) |
Directions:
1. Heat the olive oil in a nonstick skillet over medium-high heat. 2. Saute the garlic for a few seconds, then add the red vermouth and tomatoes. Cook 5 minutes. 3. Add the shrimp and parsley, cook 3 mins, or untill shrimp are pink. Season with hot pepper sauce, salt & pepper, to taste. 4. Serve over hot rice if desired. |
