Simple and Scrumptious. Ingredients:
2 tablespoons butter |
6 garlic cloves |
1 carrot |
1 red pepper (bell) |
1 red pepper (hot) |
2 cups spinach |
1 cup white wine |
18 jumbo shrimp |
1 teaspoon curry |
1 teaspoon salt (lemon-pepper) |
4 ounces whole wheat linguine |
Directions:
1. Slice garlic very thin, saute in butter until soft. Shred carrot, chop peppers and spinach and add to pan. Add wine and seasonings and simmer 7 minutes stirring occasionally. Add shrimp (tails removed) and heat through if cooked or until pink if uncooked. Serve hot over linguine. Enjoy! |
