Shrimp Sauteed with Broccolini |

This ginger-spiced dish is a tasty way to enjoy a serving of vegetables. Ingredients:
1 pound broccolini, trimmed |
2 teaspoons olive oil |
1/4 cup sliced green onions |
1 tablespoon thinly sliced peeled fresh ginger |
3/4 pound medium shrimp, peeled and deveined |
1/2 teaspoon salt |
2 tablespoons shrimp butter |
3 cups hot cooked long-grain brown rice |
Directions:
1. Cook Broccolini in boiling water for 2 minutes or until nearly tender; drain. 2. Heat a large nonstick skillet over medium-high heat. Add oil to pan; swirl to coat. Add onions and ginger; sauté 1 minute. Add shrimp, salt, and Broccolini; sauté 4 minutes or until shrimp are done. Stir in Shrimp Butter; cook for 30 seconds or until butter melts. Serve over rice. |
