This is a version of ceviche...but not hot or spicy...everyone will enjoy this recipe Ingredients:
1 pound of salad shrimp |
3 tomatoes |
1 red onion |
1/2 bunch of cilantro |
juice of 4 limes |
salt and pepper to taste |
3 cloves garlic |
Directions:
1. Place shrimp in a large non-reactive bowl. 2. Finely dice tomato, red onion; finely mince garlic and add to shrimp. 3. Rough chop 1/2 a bunch of fresh cilantro and add to shrimp mixture. 4. Add the juice of 4 limes to mixture and stir to thoroughly combine all ingredients. Add salt and pepper to taste and chill for at least 2-3 hours. Serve with tortilla chips. |
