There are a couple of shrimp salsa recipes on RecipeZaar, but I thought this one was unique enough to add. I make this constantly because people always love it. Very easy to adjust the quantity for big parties or small gatherings. I can eat this by the spoonful! Ingredients:
2 lbs tiny baby shrimp |
2 (10 ounce) cans rotel |
3 avocados, cut into small pieces |
1/2 cup italian salad dressing |
1/2 lime, juice of |
1 small onion, chopped |
chopped cilantro |
salt |
serve with tostitos scoops |
Directions:
1. Rinse the shrimp. 2. Mix all ingredients except avocado in a bowl. 3. Let the mixture chill for several hours to overnight. 4. Add the avocado just before serving. 5. Serve with Tostitos Scoops. |
