This is my new go-to appetizer. I love to serve this in a martini glass, with several cooked shrimp, and a lime slice, around the ring of the glass. It is beautiful and delicious. You can make it as spicy or mild as you like. I usually use a medium salsa, and find it is spicy enough, for most guests. It is wonderfully fresh tasting. Ingredients:
1/3 lb cooked shrimp, well drained, and cut into small pieces |
3 chopped green onions |
3 chopped roma tomatoes or 2 tomatoes, chopped |
5 chopped fine radishes |
4 teaspoons fresh lime juice |
1 diced jalapeno |
1 cup medium prepared salsa |
3 -4 tablespoons chopped cilantro |
1/4 teaspoon salt |
1 dash black pepper |
1 minced garlic clove |
1 avocado, cut into small pieces (optional) |
Directions:
1. Mix all of the items together, except avocado. Refrigerate 2 to 3 hours to blend flavors. Add avocado, when ready to serve. Otherwise the avocado breaks down into the salsa. |
