SHRIMP SALAD WITH KIWI BERRIES This one caught my attention because I love shrimp. I don't even know what Kiwi Berries are, so I haven't gotten around to making this one, but it is in my list of recipes to try, sometime in this lifetime.
Ingredients:
1/2 pound kiwi berries sliced
1/2 pound large shrimp shelled, deveined and cooked with tails intact
1/2 cup finely julienne radish
1/2 cup finely julienne pomegranate
1/2 head butter lettuce
2 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar
2 tablespoons lemon juice
1 tablespoon honey
1 teaspoon grated ginger
1/2 teaspoon salt
1 teaspoon freshly ground black pepper
Directions:
1. Arrange berries, shrimp, radishes and pomegranate on shallow lettuce lined salad bowl.
2. Mix together olive oil, vinegar, lemon juice, honey, ginger salt and pepper and pour over salad.
