Here is a Beautiful and Tasty salad using the last of your wonderful tomatoes from the garden. A fantastic tomato is a perfect vessel for a cool summer dinner to suit all tastes and budgets! Here I use precooked shrimp and great spices for a delicious dish. Read more .....Easy too. Ingredients:
2 large ripe tomatoes |
1/2 pound cooked shrimp, lightely chopped (buy from deli, ready to go) |
2 tablespoons mayonnaise |
1 tablespoon chopped fresh dill |
1 tablespoon capers |
Directions:
1. Remove tops of tomatoes and core. Scoop out insides, discarding the seeds but keeping the flesh. Reserve tomato shell. 2. Chop flesh and add to a mixing bowl. In the same bowl, add shrimp, mayonnaise, dill and capers and stir to combine. . 3. Season with salt and pepper. 4. Stuff mixture evenly in tomatoes. Serve tomatoes surrounded by side salad. Enjoy |
