Shrimp Salad In Lemon Boats |

There are a lot of shrimp salad recipes out there, but this on works very well for serving lemon half boats for a brunch or luncheon party, shower or other gathering. Canned tiny shrimp can be used for this, but iit's worth it to use a good brand. Ingredients:
about 2 cups shrimp, cooked and chopped(or tiny shrimp, whole) |
1/2 cup celery, finely chopped |
3 green onions, sliced |
1 small red pepper, finely diced |
3 large lemons, cut lengthwise with flesh scooped to make boats , cutting off very small portion of the outer shell if needed to keep shells from falling on plate(reserve juice from 1/2 of one lemon) |
1/2 cup mayonnaise |
1-2t dijon mustard |
1-2t dried dill |
2tsp old bay seasoning |
salt and pepper |
Directions:
1. Combine shrimp, celery, onion, red pepper, lemon juice, dill salt, pepper and Old Bay in bowl. 2. Add mayo and mustard a lil bit at a time until consistency and taste of your preference. 3. Chill for a couple of hours 4. **SUGGESTION: serve in lemon boats over a bed of shredded lettuce or your favorite cole slaw and serve with party rye breads brushed with a touch of olive oil and garlic powder and lightly toasted in the oven** |
