In looking for something different to go with dinner (or this could be dinner),I rediscovered this oldie but goodie...from an ancient Betty Crocker recipe card. Ingredients:
1 cup cooked baby shrimp |
3 cups cooked rice |
1/4 cup sliced celery |
1/4 cup pimento stuffed olive, sliced |
1/4 cup chopped green pepper |
1/4 cup minced onion |
1/2 teaspoon salt |
1/4 teaspoon black pepper |
3 tablespoons mayonnaise |
1/2 cup french dressing |
2 tomatoes, cut in wedges |
Directions:
1. In a large bowl combine the shrimp, rice, celery, olives, green pepper and onion. 2. Stir together salt, pepper, mayo and French dressing. 3. Toss with ingredients in bowl. 4. Cover and chill. 5. To serve, spoon salad onto crisp greens and garnish with tomato wedges. |
