Every once in a while, we have a cooking contest to see who can make the best dish for under $15. Some friends made this pasta, and it was a hands-down winner - delicious and simple to prepare. If you like shrimp, you will love this recipe! Ingredients:
8 ounces pasta, your favorite (i like farfalle and penne) |
1 tablespoon olive oil |
4 garlic cloves, minced |
1/2 cup onion, chopped |
2 lbs raw shrimp, peeled and deveined |
2 (15 1/2 ounce) cans diced tomatoes |
2 (15 1/2 ounce) cans water-packed artichoke hearts, drained |
1/4 cup dry white wine |
1/4 cup fresh basil, chopped |
salt and pepper |
freshly grated parmesan cheese |
Directions:
1. Prepare pasta according to direction. 2. Heat olive oil in a large saucepan over medium heat. 3. Add garlic and onio. Cook 2-3 minutes, stirring occasionally. Be careful not to let the garlic burn! 4. Add shrimp, white wine, tomatoes, and artichoke hearts. Cook until shrimp are pink/opaque, stirring occasionally, about 5 minutes. 5. Combine pasta with shrimp mixture. Add in chopped basil, stir well to combine, and cover pan. 6. Let sit for about 2 minutes, or until basil wilts. 7. Salt and pepper to taste. 8. Serve hot with freshly grated parmesan cheese. |
