Shrimp Mashed Potatoes (Paula Deen) |

Ingredients:
8 to 10 medium red new potatoes, skin on, sliced 1/4-inch thick |
1/2 cup hot milk |
8 tablespoons (1 stick) butter |
1/2 cup sour cream |
salt and pepper |
1 cup cooked and chopped shrimp |
1 teaspoon paprika |
Directions:
1. Preheat oven to 375 degrees F. 2. Cook potatoes in boiling water for 15 minutes or until fork-tender in a medium pot. Mash potatoes in a mixing bowl. Add hot milk, butter, sour cream, and salt and pepper, to taste. With electric mixer, beat until moderately smooth. Don't over beat them, a few lumps are nice. Add shrimp. Whip until mixed. Adjust thickness by adding more milk if desired. Stir in paprika for flavor and color. Reheat in oven, if needed. |
