You can use precooked shrimp and cut down the grill time. Ingredients:
1 tbsp extra virgin olive oil |
1 tbsp balsamic vinegar |
3/4 tsp lemon zest, finely grated |
1 1/2 tsp fresh lemon juice |
1/8 tsp kosher salt |
1/8 tsp fresh ground black pepper |
3 cloves garlic, minced |
40 large shrimp, peeled and deveined |
3 lemons , sliced into 16 1/4 slices |
Directions:
1. Combine marinade ingredients (olive oil through garlic) in a zip-lock bag. Add shrimp to bag, seal, shake, and refrigerate for 30 minutes or up to 3 hours. 2. Remove shrimp from marinade and thread with lemon slices onto presoaked skewers, about 5-6 per skewer. Reserve marinade for basting. 3. Grill shrimp 3 minutes per side over medium heat, basting with reserved marinade. 4. Serving size is 2 skewers per person. |
