Basic Jambalaya recipe (May use Zatarains box mix for rice and spices) Ingredients:
215 g rice, raw white |
43 g brown rice |
794 g tomatoes, diced |
400 g shrimp |
183 g green pepper, diced |
183 g celery, diced |
220 g onion, diced |
3 cups water |
33 g tomato paste |
7 g sugar |
6 g garlic, minced |
1 tbsp oil |
1/8 tsp cayenne pepper (or 1 tsp cajun spice) |
Directions:
1. Saute tomatoes, peppers, onion and celery in oil until clear 2. Add Tomato paste and sugar and cook 2 minutes 3. Add 3 cups of water and rice with cajun spices 4. Bring to a boil, reduce heat, cover and simmer 20 minutes 5. After 20 minutes add the shrimp and cook 5 minutes 6. Remove from heat and let sit covered 5 minutes to absorb excess moisture |
