SHRIMP IN SWEET CHILI SAUCE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Staley Estate in Wills Point, Texas in 1982. Ingredients:
2 tablespoons fresh lime juice |
1 tablespoon fish sauce |
1 teaspoon grated fresh ginger |
1 pound fresh shrimp cooked and deveined |
2 tablespoons vegetable oil |
1/4 cup sweet chili sauce |
2 tablespoons chicken broth |
1/4 cup chopped fresh cilantro |
Directions:
1. Combine lime juice, fish sauce and ginger in a bowl and mix well. 2. Add shrimp and stir to coat evenly then let stand for 10 minutes. 3. Drain shrimp and pat dry with paper towels. 4. Heat a wide nonstick frying pan or wok over medium high heat until hot. 5. Add oil swirling to coat the bottom. 6. When oil is hot add shrimp and fry turning once for 4 minutes. 7. Meanwhile in a small saucepan combine the sweet chili sauce and broth. 8. Bring to a simmer over medium high heat and simmer until sauce thickens slightly. 9. Transfer shrimp to a serving plate then drizzle with sauce and garnish with cilantro and serve. |
