Shrimp in Lemon Garlic Sauce |

From The Multi-Cultural Cuisine of Trinidad and Tobago and the Caribbean, the Naparima Girls' High School Cookbook. I borrowed the book and want to input the recipes that interest me! You can vary this recipe by substituting lemon or lime juice with 1 tbsp., prepared mustard or or 2 tsp. dry mustard. Ingredients:
4 tablespoons margarine or 4 tablespoons butter, softened |
1 1/2 teaspoons garlic, minced |
1 teaspoon salt |
1/2 teaspoon paprika |
1 tablespoon limes or 1 tablespoon lemon juice |
1/2 teaspoon hot pepper, chopped |
1 teaspoon worcestershire sauce |
2 tablespoons parsley, finely chopped |
2 lbs medium shrimp, shelled and deveined, seasoned with |
salt and pepper |
1 cup dry breadcrumbs, seasoned with |
salt and pepper |
1 sprig parsley |
lime wedges or lemon wedge |
Directions:
1. Cream butter with garlic, salt and paprika. 2. Add lime or lemon juice, hot pepper, Worcestershire sauce and parsley; blend well. 3. Place a layer of shrimp in a greased baking dish, then spread some garlic butter and sprinkle some crumbs. 4. Repeat layers 3 or 4 times ending with crumbs. 5. Bake in a hot oven at 400-425 degrees F. for 15-20 minutes. 6. Garnish with parsley and lemon or lime wedges. |
