From my collection of handwritten recipes. Ingredients:
1 medium onion, halved |
3 stalks celery |
4 tablespoons olive oil |
2 garlic cloves, minced |
1 large green pepper, quartered |
1 (28 ounce) can whole tomatoes, chopped |
1 (16 ounce) can tomato sauce |
1 teaspoon sugar |
1 bay leaf |
1 teaspoon thyme |
1/2 teaspoon salt |
1 tablespoon parsley |
1 teaspoon hot pepper sauce |
2 lbs medium shrimp |
hot cooked rice |
Directions:
1. Slice onion, celery and green pepper. Keep each separate. Heat oil in 5 quart pan over medium heat. Add garlic and saute for 1 minute. Add onion and saute for 2 minutes. Add celery and green pepper and saute for 3 minutes longer. Add tomatoes, tomato sauce, salt, bay leaf, sugar, thyme, parsley and hot pepper sauce. Reduce heat and simmer for 15 minutes. Add shrimp and cook for 4-5 minutes longer, stirring gently. Serve over hot cooked rice. |
