Shrimp Fritters, Cadiz Style |

Cooking time includes 3 hours refrigerating time. Whilst they make a nice appetizer, we often make them to accompany a Chinese or Thai style meal. Ingredients:
1/2 an onion, minced |
2 tablespoons parsley (or seaweed) |
125g small, shelled shrimp or chopped, shelled prawns |
1/4 kilogram flour |
1/4 teaspoon baking powder |
1/2 litre water |
50ml white wine |
1 teaspoon salt |
dash of cayenne (optional) |
oil for frying |
Directions:
1. Mix the minced onion and parsley or seawood with the shrimp 2. Add the flour and baking powder, then stir in the water and wine to make a heavy batter 3. Season with salt and cayenne, if using. 4. Cover, and let the batter sit for 3 hours in the refrigerator 5. Heat oil, about 2 cms deep, in a frying pan 6. Drop spoonfuls of the batter into the hot oil and fry until golden, turning half way through 7. Drain on kitchen paper and serve hot 8. Makes about 36 |
