Ingredients:
1 cup all-purpose flour |
1 teaspoon baking powder |
1 teaspoon salt |
1/4 teaspoon pepper |
1/4 cup milk |
2 eggs, beaten |
1 pound medium shrimp, cooked, peeled, deveined, and chopped |
2 tablespoons finely chopped onion |
1 tablespoon chopped fresh parsley |
1/8 teaspoon hot sauce |
vegetable oil |
cocktail sauce or tartar sauce |
Directions:
1. Combine flour, baking powder, salt, and pepper in a medium mixing bowl; stir in milk and eggs. Add shrimp, onion, parsley, and hot sauce; stir well to blend ingredients. 2. Carefully drop batter by tablespoonfuls into deep hot oil (375°); cook only a few at a time, turning once. Fry until fritters are golden brown. Drain well on paper towels. Serve hot with cocktail sauce or tartar sauce. |
