Addictive shrimp munchies. Can be served on top of a salad for lunch or piled up on a platter for an appetizer. Cooking time includes 3 hours chilling time. Ingredients:
1/2 cup finely chopped onion |
2 tbsp. chopped flat leaf parsley |
1 tbsp. finely chopped basil |
1 tbsp. finely chopped chives |
6 oz. chopped shrimp (fresh or frozen is better than canned) |
1 1/2 tsp. sour cream |
1 tsp. grated lemon zest |
pinch cayenne |
1 cup all-purpose flour |
1/4 tsp. baking soda |
1/4 tsp. baking powder |
1 cup cold water |
salt and freshly ground pepper |
vegetable oil for frying |
Directions:
1. Combine onion, parsley, basil, chives, shrimp, sour cream, lemon zest, cayenne, flour, baking soda and baking powder in a bowl and stir until well incorporated. Stir in water to make a thick batter. Season with salt and pepper. Cover and refrigerate for 3 hours. 2. Add 3/4 inch-deep vegetable oil in a wok, deep fryer or deep skillet. Heat on medium heat until the temperature reaches 325ºF. on a deep-fry thermometer. 3. Drop 1 tablespoons of batter at a time and fry for 1 1/2 to 2 minutes or until golden and cooked through. Makes about 24 fritters. |
