Fra Diavolo means Brother Devil and usually refers to a dish that is heavily sprinkled with black pepper and grilled, in America it is referred to, as spicy with hot-pepper sauces. Ingredients:
1 lb large shrimps, peeled and deveined |
1 tsp salt, adjust to taste |
1 tsp dried crushed red pepper flakes (hot peppers) |
3 tbsp olive oil |
1 medium onion, finely chopped |
1 (14 oz) can diced tomatoes (with the juice) |
1 cup dry white wine |
3 garlic cloves, chopped |
1/4 tsp dried oregano leaves |
3 tbsp chopped fresh flat-leaf parsley |
3 tbsp chopped fresh basil |
Directions:
1. In a medium bowl, toss the shrimps with 1 tsp of salt and red pepper flakes. In a large, heavy skillet, heat the oil over a medium-high heat. Add the shrimps and sauté until just cooked through, about 2 minutes. Using a slotted spoon, transfer the shrimps to a large plate and set aside. 2. Add the onion to the same skillet and sauté until onions are translucent, about 5 minutes. Add the tomatoes with the juice, wine, garlic and oregano and simmer until the sauce thickens slightly, about 10 minutes. Return the shrimps and accumulated juices to the tomato mixture and toss to coat. Remove from the heat and stir in the parsley and basil. Season with more salt if needed. Spoon the shrimp mixture into shallow bowls and serve. |
