Healthy alternative to the traditional Fettuccine Alfredo
Ingredients:
13 oz fettuccine, whole wheat, uncooked
1 1/4 cup chicken broth
4 tsp flour
3 oz cream cheese, fat free
2 tbsp parmesan cheese, reduced fat
1/4 tsp nutmeg
1/8 tsp black pepper, ground
2 tbsp parsley, fresh
16 oz shrimp, small
6 tbsp parmesan cheese, reduced fat
Directions:
1. Cook pasta as directed on package.
2. Thaw shrimp in large bowl filled with cold water.
3. Meanwhile, combine broth and flour in medium saucepan over medium heat. Stir in cream cheese, 2 tbsp Parmesan cheese, nutmeg and pepper; cook 2 minutes, stirring constantly with wire whisk until mixture boils and thickens. Drain shrimp and stir into sauce.
4. Drain pasta. Toss with sauce. Sprinkle with remaining Parmesan cheese and parsley.
