great Ingredients:
1 cup plain yogurt |
1/4 cup cilantro |
8 whole wheat tortillas |
1 onion, sliced |
1 salt |
1 pepper |
14 oz can diced tomatoes |
2 cloves garlic, chopped |
1/2 t crushed red pepper |
1 lb. shrimp |
Directions:
1. In bowl combine yogurt and 2 T cilantro set aside. In skillet sprayed with pam cool onion seasoned with salt and pepper until brown and tender. Add tomatoes, increase heat and cook until liquid is evaporated, transfer to bowl. Add garlic and red pepper to skillet with pam and cook 1 min., add shrimp and season with salt and pepper, cook until done. Stir in remaining cilantro. Serve with heated tortillas, onion mixture and yogurt. |
