I love shrimp and ran across this recipe. Enjoy. Ingredients:
1 tablespoon vegetable oil |
1 scallion (including tops) |
1 1/2 tablespoons curry powder |
1 cup coconut milk |
1 cup chicken broth |
2 cups sweet potatoes or 2 cups white potatoes |
3/4 lb large shrimp, cleaned |
2 teaspoons lime juice |
1 cup green peas |
2 tablespoons chopped fresh cilantro |
Directions:
1. In skillet, heat oil until hot. 2. Saute scallion, about 1 minute. Stir in curry. 3. Whisk in coconut milk and broth; bring to a simmer. 4. Add potatoes; cook, partially covered until tender, about 10 minutes. 5. Add shrimp, lime juice, peas and chopped cilantro. 6. Simmer until shrimp are opaque and cooked through, about 3 minutes. 7. Serve with rice or whatever you desire. |
