These are so good! Ingredients:
8 ounces shrimp, cooked |
8 ounces crab, flaked |
1/2 cup corn |
1/2 cup salsa, chunky |
1/4 cup sour cream |
2 small jalapeno peppers, seeded, chopped fine |
2 cups cheddar cheese, shredded |
1 cup monterey jack pepper cheese, shredded |
8 tortillas, 8-inch flour |
Directions:
1. In medium bowl combine shrimp, crab, corn, salsa, sour cream and peppers. 2. Combine cheeses together. 3. Top 4 tortillas with 3/4 cups of cheese. 4. Top cheese with mixture. 5. Top with remaining 4 tortillas. 6. Heat nonstick skillet over medium heat. 7. Place a quesadilla in skillet and cook until browned, 3 - 4 minutes. 8. Flip and cook 3 minutes more or until cheese is melted. 9. Cut into 6 wedges. |
