Shrimp Blue Cheese And Mushroom Salad |

This is a recipe that I got from a co-worker a few months back. She brought this to the office and it was an instant hit. Greatness in a bowl. Enjoy Ingredients:
1 cup salad oil |
1/4 cup red wine vinegar |
1 egg yolk |
1 tablespoon spicy mustard |

1 head butter lettuce |
1 head endive salad |
2 ounces small shrimp |
2 ounces roquefort cheese crumbled |
1 bay mushroom |
1/2 teaspoon salt |
1/2 teaspoon freshly ground black pepper |
chopped parsley for garnish |
Directions:
1. Mix egg yolk and mustard with whip then add vinegar. 2. Slowly pour in salad oil while whipping then season with salt and pepper. 3. Wash butter lettuce and endive then toss with dressing and sprinkle with pepper. 4. Add shrimp, cheese, mushrooms and parsley then toss gently and serve. |
