1/3 cup olive oil |
2 teaspoons dijon mustard |
1/3 cup fresh lemon juice |
3 cups farfalle pasta, cooked |
1 cup cooked shrimp, peeled |
1/2 cup cherry tomatoes, cut in half |
1 lb baby spinach, washed drained |
2 shallots, minced |
1 avocado, peeled, chopped |
1/4 cup feta |
Directions:
1. For the dressing, mix olive oil, Dijon mustard, and lemon juice together. Set aside. 2. Mix cooked pasta, shrimp, cherry tomatoes, spinach, shallots, avocado, and feta together; toss. 3. Add dressing and toss; serve or chill. |
