Shrimp Avocado And Feta Salad

This is taken from one of my light cookbooks and is oh so good so I thought I'd share
Ingredients:
16 oz large shrimp, peeled & deveined
3 cups diced & seeded plum tomatoes
1 cup diced ripe avocado
1/3 cup chopped cilantro or parsley
1/4 cup diced red onion
1/2 cup light feta cheese, crumbled
2 t olive oil
2 t freshly squeezed lemon juice
1 1/2 t minced fresh garlic
1 t minced jalapeno pepper or 1 t hot sauce (optional)
pinch salt & freshly ground black pepper
Directions:
1. Spray non stick skillet with cooking oil & place over medium-high heat. Cook the shrimp just until pink, about 3 min. Remove from heat, let cool and dice.
2. Combine shrimp with remaining ingredients in a large serving bowl and mix well. Serve immediately & enjoy!
