Shrimp & Asparagus Casserole |

I found this in a magazine I was looking at today. It sounds good. I am not sure all of my family members will like this, but I plan on making it. Ingredients:
1/4 cup butter |
1/4 cup all-purpose flour |
1 cup milk |
3/4 cup light cream |
1/4 cup chicken broth |
1/2 teaspoon salt |
1/8 teaspoon pepper |
1 egg yolk, slightly beaten |
1/2 cup grated parmesan cheese |
1 lb cooked small shrimp |
2 (10 ounce) packages frozen asparagus cuts, thawed and drained |
1/2 cup breadcrumbs |
Directions:
1. Preheat oven to 350 degrees. 2. In a medium saucepan, melt butter. Stir in flour, cook, stirring constantly, for 1 minute. 3. Gradually whisk in milk and cream, cook until thickened. Stir in broth, Season with salt and pepper. 4. Stir in egg yolk, cheese and shrimp. In a greased 2 1/2 quart casserole dish, arrange half of the asparagus, spread with half the shrimp mixture. Repeat layers. 5. Top with bread crumbs. 6. Bake for 30 minutes. |
